  • ½ cup chopped pecans
  • ½ cup corn syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, combine the rolled oats, flour, baking soda, and chopped pecans.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the corn syrup gently.
  6. Scoop tablespoon-sized portions of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until the edges are golden. Allow them to cool for 5 minutes on the baking sheet before transferring to a wire rack.
